Cheese: Garlic and Herb Goat Cheese


Pairing Review: This pairing was delicious. The pinot noir was semi-sweet and had subtle aromas of dark cherry and other raspberries which I thought went well with the hints of garlic and herb in the creamy goat cheese. The pinot noir had a touch of oak also and the result was a smooth finish in the palate. Although the pinot noir was a bit sweet, it did not engulf the rich and velvety flavor of the goat cheese.

Cheese: Hatch Pepper Heritage Cheddar


Pairing review: I thought the Cabernet Sauvignon overpowered the cheddar in this pairing. The cheddar was too mild and light compared to the rich cabernet sauvignon that had dark aromas of cherry, tobacco, cinnamon, and other spices. The wine was a 2012 vintage, which I could not tell the difference. However, it was still tasty and had a rich and smooth finish.

Pairing review: This pairing was a lot of fun, from opening the bottle to finishing the last drop between friends. The brie cheese was soft and had a mildly bitter taste which went with the dry sparkling wine. The sparkling wine had subtle flavors of pineapple and pear with hints of almond and honey. One thing I did not like about the sparkling wine was that it evaporated once it hit the tongue, almost like swallowing air. However, everybody was content. There will always be a good time with a sparkling wine.
