Palisades Wine Dinner - Oregon

Paired with quail leg: This pairing was absolutely delicious. The quail leg was wrapped in a salty slice of bacon and the fat quality in the bacon and quail equalled a great combination with the semi-dry pinot noir. The pinot noir was very smooth. The saltiness of the bacon complimented the bright flavors of the cherry, raspberry, and cinnamon. I would for sure buy this pinot noir in the future.

Paired with smoked salmon: This pairing was one of my favorites. The salmon was smoked and in a blackberry gastrique sauce. This was also the best rose I had tasted yet. There were delicious aromas of strawberries, tangerine, watermelon, and many fruits I could not describe. The flavors were brought out due to the slight chill. It was very clean and had the perfect amount of sweetness to my palette after the bite of salmon and the sweet blackberry sauce. The sauce brought out the many fruit flavors in the rose and had the perfect acidic finish. I would instantly buy this rose.

Paired with Oregon forage pizza: The oregon forage pizza was a great starter and paired well with the pinot gris. The pizza was topped with havarti cheese, mushrooms and hazelnuts. The sweet and saltiness of the pizza to me, was balanced nicely with the fresh aromas of pear, kiwi and hints of lemon zest. This medium bodied wine was chilled and had a crisp acidic finish. I would definitely try again.
